One of my favorite things about summer is ice cream. As a kid, I patiently waited by the window in hopes that the neighborhood ice cream truck would pass by my street. I was one of those kids who ran for it if ever the ice cream truck passed me up. Now that I'm older, my love for ice cream hasn't changed one bit. I don't know what it is about ice cream that's just so comforting. Heck, it's good even on the coldest of days; yet as much as I love it, I have moderated my consumption and sought out healthier options especially after working my butt off trying to get that summer bikini body we all long for. And just because summer is winding down and Fall is only days away, it doesn't mean that you can now hide behind the layers either! So in my attempt to hold onto the little bit of summer I have left, here is a healthy recipe from pure2raw.com if ever you're craving for some ice cream. I love mint and avocados and when I found this recipe, I knew I had to make it. Rather than dairy, it's based off of coconut milk which contains antioxidants similar to those found in berries and dark chocolate. What I love about this is that it's not overly sweet and it's super creamy just like soft serve.
Mint Brownie Avocado Ice Cream (gluten-free, vegan, mostly raw, sugar-free, soy-free)
- 2 avocados (about 1 cup)
- 1/4 cup coconut milk
- 1 tbsp sunflower lecithin (this really helps with texture, could use guar gum or xanthan gum about 1/2 tsp or so)
- splash of vanilla extract
- 1/2 – 3/4 tsp stevia powder
- 25 leaves of fresh mint
- 1 tsp spirulina
- 1/4 tsp peppermint extract
- 2-3 Twin Cakes Bakery Peppermint Brownie Bites
Place all ingredients into a blender and blend till nice and smooth.


Mint and avocados are two of my favorite things! I love how this recipe combines them both...I have to try this out!
